Efo riro is very popular in Nigeria, It is a vegetable soup. You can use any type of vegetable you like. In this case, I’m using spinach and Kale. Efo riro involves a condiment that people attributes to it; iru (locust beans) and usually prepared with palm oil. Using locust beans and palm oil is the traditional way of cooking vegetable soup, but I’m changing that in this recipe..lol.
When your appetite called for efo riro and you don’t have and can get all you need to prepare it, all you need to do is to improvise. I improvise and all I can say is that it still taste the same if not better. The smell in my kitchen when I prepared it was heavenly.
- 1/2 Pound Spinach
- 1/2 pound Kale
- 2 Habanero (rodo) add more or less
- 2 Red bell pepper (Tatashe)
- 1/2 Cup Vegetable oil ( you can palm oil)
- 1/2 Pound Shrimp (Deveined, peeled, tail on)
- 2 Onion (add more or less)
- 2 Tablespoons Ground crayfish
- Seasoning cube
- Salt to taste
Clean the Red bell pepper, onion, and habanero.
Roughly blend the pepper and set aside.
Put a saucepot on medium heat and pour oil. Heat the oil.
When the oil is hot, add onion (chopped). Saute the onion till it's soft.
Add ground crayfish, and stir let the onions and the crayfish, stir both onions and crayfish until fragrant and not burn.
Add Pepper and stir. Continue cooking.
Add Shrimps, seasoning cubes and salt.
Mix together and cook until it reduced and the oil float on the top. For about 15 minutes or more. If the fried pepper is too thick add water or broth to loosen it up a bit.
If you're using a fresh vegetable clean and chop if you're using a frozen vegetable thaw and squeeze out the liquid.
Add chopped kale and spinach or any type of vegetables of your choice.
Mix and let everything combine, taste and adjust the seasoning. Leave to cook for like 3-5 minutes. Turn off the heat.
Serve with your favorite swallow (solid food), rice, plantain or eat by itself.
