Ewa Agonyin Stew (Mashed Beans Stew)

The last post was about Ewa Agonyin or mashed beans and I promised to put up the stew that goes with the mashed beans which and it is called or known as Ewa Agonyin Stew (Mashed Beans Stew), here you have it. I’m going to show and explain to you how to fry the mashed beans stew in this recipe. The stew is being made with dry pepper and only dry peppers no tomatoes or fresh pepper.

For this stew you need a lot of oil I started with one cup of oil but I later added just a little bit more. You need to bleach the oil please when you’re bleaching your oil be careful you can cover the pan/pot and bleach on low heat after that turn off the heat and allow the oil to cool down then heat the oil before you start your cooking. This will reduce the level of smoke and splattering.

Ewa Agonyin Stew (Mashed Beans Stew)

Ingredients
  • 2 Pieces Cameroon pepper
  • 2 Tablespoons Red pepper flakes(ground pepper/ata gigun)
  • 2.5 Oz Dried bell pepper (or shobo or mixture)
  • 1 Cup Palm Oil (bleached) or more
  • 1 Onion (sliced or diced)
  • 2 Tablespoons Ground Crayfish and fish (you can use just ground crayfish)
  • 1/2 Cup Grilled fish (optional)
  • Handful small dried fish (optional); soaked in hot water and salt.
  • Seasoning Cube/powder
  • Salt to taste
Instructions
  1. Pepper rehydration: Soak the dried pepper in hot water and set aside.

  2. Place a saucepan or a pot over low medium heat. Pour oil into the pot (you might need to add more oil) and cover, it will take time, about 10-15 minutes or thereabouts, don't be tempted to increase the heat.  While the oil is bleaching blend the dried pepper (roughly). Make sure your kitchen is well ventilated. After the oil has been bleached allow it to cool down so you need to turn off the heat or reduce it to low. After cooling down hear the oil and add chopped onion.

  3. And fry until it's brown and not burn.

  4. Add the blended pepper, red pepper flakes/dried pepper and fry Let it fry for about 30-35 minutes while frying the stew make sure you stir so it doesn't burn. Fry until the oil floats.

  5. Add the ground crayfish, dried fish, groundfish (if you're using), grilled fish/dried fish (crumbled), and continue to fry. If you notice the pepper mixture soaks the oil you can bleach some oil on the side and add more. You need a lot of oil to fry this stew.

  6. Season with salt and seasoning powder/cube and continue to fry stir as you fry you don't want it to burn at all. You'll notice the pepper mixture color changes to dark and darker. Check the seasoning and readjust if necessary.

Recipe Notes

Note:  I only used the dried pepper and spice is mild, you can mix dried bell pepper (dried tatashe) with dried pepper (shonbo). You can double the recipe if you want more quantity.

If you're using dried fish, soak it in hot water and salt to clean and make it softer before cooking in the stew.
