Nigerian Egg Rolls

Nigerian egg roll is one of the popular appetizers in Nigeria and some part of African countries. The egg roll is simply rolling a hard-boiled egg into the dough and fry or bake it as simple as that. The dough for egg roll is soft but not sticky, some people use baking powder to make egg roll but I prefer to use yeast because the texture is fluffier (which I like) than the baking powder recipe texture.

I made twelve egg rolls from this recipe but have a leftover dough which my kids turn to “roundabout” snacks…lol

This Nigerian egg rolls should make about 17 rolls with large eggs, but if you’re using small eggs you should have over 25 egg rolls.

Nigerian Egg Rolls
Servings: 17 Egg Rolls
Ingredients
  • 3 Cups All-purpose flour Plus extra for dusting
  • 1 Teaspoon Yeast
  • 1/2 Cup Luke warm water
  • 2/3 Cup Milk
  • 3 Teaspoons Granulated sugar (or more)
  • 1/2 Teaspoon White pepper
  • 1 Teaspoon Salt
  • 1.5 Teaspoons Paprika
  • 4 Tablespoons Butter
  • 1 Teaspoon Nutmeg
  • 17 Hard-boiled egg
Instructions
  1. Proof yeast: In a small bowl, add the warm water, yeast and sprinkle a dash of sugar over it and set aside for about 5 minutes until it foams.

  2. In another bowl, sift all the dry ingredients; flour, sugar, nutmeg, salt, paprika, and white pepper.

  3.  Add butter and mix all together.

  4. Add the yeast mixture and milk. Mix thoroughly to incorporate all the ingredients, don't overwork the dough. If the dough sticks to your palm you can sprinkle a tablespoon of flour at a time to get a soft but not sticky dough.

  5. Work in batches for making the egg rolls balls. Cut the dough into quarter or half and place on a floured work surface.

  6. Roll the dough not too thin or too thick to about 1/4'' thickness and use a dough cutter or any round object to cut the dough.

  7. Place a hard-boiled egg in the dough you cut out and pinch and/or roll on your palm to close the opening of the dough to form a ball, make sure you don't make any hole while doing this.

  8. Place the dough ball on a floured surface (you can use a baking sheet) and gently place the closed end on the baking sheet.

  9. Repeat the process when you are done, cover the dough balls with a plastic wrap and let the dough for rest for about 30 minutes.

  10. In a large saucepan or a fryer add oil and heat to about 350 degrees F.

  11. Drop the dough balls gently into the hot oil and fry for about 4-5 minutes or until golden brown. Flip the dough halfway through once while frying and fry both sides until golden brown.

  12. Remove and drain on a paper towel. Repeat the frying process until you finish all the dough.

  13. Serve warm with your favorite drink. Enjoy!

Note: 

 You can bake if you don't want to fry. Preheat the oven to 350 degrees F and bake for about 20 minutes until golden brown.

    1. Awesome! You can calculate it, this recipe gave about 17 egg rolls, are you making the same size/smaller/bigger?
      Those are things you’ll consider. For example, if you’re making 9cups use 3 tsps of yeast and so on.

    1. Hello Victoria,
      If the dough you wrap the eggs with is too thick this might cause it.
      Simply make sure the dough is rolled out thin but too thin before wrapping the eggs.

      You’ll need to knead your dough very well, the more you knead the better. Also, make sure your dough is not too thick (rolling) before you wrap the egg in it.

      Could you please provide the size of the paint container?
      The paint container I have here is about 2.5 quart if yours is the same.
      You can use 3 tablespoons yeast.

  7. Hi, I don’t know why but my eggroll keeps opening while frying. I’ve tried everything possible but it keeps opening.

    1. Hello IB,
      When you’re wrapping the egg in the dough make sure your eggs are not wet.
      Close the seam properly and gently roll with your palms then place the dough seam down.
      Sprinkle flour on the baking sheet/tray you’re going to place the dough to keep it dry.

      I’m afraid you can’t use both together. It is either you use baking powder as stated or use yeast.
      If you want to use yeast use 1 teaspoon and proof it in warm water when it foams up then continue with the process.
