Preheat the oven to 350 degrees F.
Line the muffins pan and spray with baking spray.
In a bowl, whisk, the baking soda, flour, salt, ginger, cloves, and cinnamon. Set aside.
Use a stand mixer or a hand electric mixer to cream butter, lemon zest, and sugar, it takes about 1 minute or until it's fluffy.
Add molasses, eggs (you might want to crack the eggs in a small bowl to avoid shell mixing with the ingredients), and vanilla. Incorporate all the together, for about 1 minute, pour in the buttermilk and dry ingredients little bit at a time. Mix everything together. Don't overmix.
Divide the batter into the prepared muffins pan.
Bake for 25 minutes in the preheated oven, or until the tester (you can use a toothpick) comes out clean.
Let it cool before removing from the pan, if you're using decorating, let it cool completely before decorating.
