Easy Pancake Muffins

Servings 12 muffins


  • 11/4 Cups All-purpose flour
  • 1 Cup Buttermilk
  • 1 Large Egg
  • 1/8 Cup Sugar (you can add more or less)
  • 2 Tablespoons Unsalted butter (melted)
  • 1 Teaspoon Baking powder
  • 1/2 Teaspoon Baking soda
  • 1/2 Teaspoon Vanilla extract
  • 1/4 Teaspoon Sugar
  • Toppings (your choice)


  1. Preheat the oven to 400 degrees F. 

    Gather all your ingredients.

  2. In a large bowl, add all the dry ingredients; flour, baking powder, baking soda, sugar, and salt. Set aside.

  3. In a small bowl, add all the wet ingredients; buttermilk, melted butter, vanilla extract, and egg the whisk all together.

  4. Add both wet and dry ingredients together, and mix to incorporate.

  5. Spray the baking muffins pan with cooking spray, oil or butter.

  6. Distribute the batter into the sprayed baking pan. Top the batter with your preferred toppings and bake in the preheated oven for 13 minutes or until the pancake has light golden brown on the edges and fully cooked in the middle.

  7. Cool the pancake before you remove from the pan.

  8. Enjoy with your favorite toppings.
