You can’t go wrong with applesauce pancake, very easy to make. I used the Fluffy Buttermilk Pancake recipe and the method except for a few adjustments. If you don’t want to whip the egg white, you can add the whole egg to the mixture.
I have Homemade Applesauce Recipe if you don’t have at hand. I added topping if you wish to make it complete with the saute apple, it’s delicious, you might want to give it a trial. Let’s get started!
- 1.5 Cups All-purpose flour
- 1 Cup Buttermilk
- 1 Cup Applesauce
- 1 Egg
- 1 Teaspoon Baking powder
- 1/8 Cup Brown sugar (adjust to your preference )
- 1/2 Teaspoon Ground cinnamon
- 2 Tablespoon Butter or oilve oil
- 1/2 Teaspoon Vanilla extract
- 1/2 Teaspoon Salt

In a bowl, add flour, salt, brown sugar, baking powder, ground cinnamon. Mix and set aside.

In another small bowl, separate the egg white from the yolk. Whip the egg white to a stiff peak with a hand mixer and set aside.

Melt butter or if you're using oil, mix with the egg yolk, vanilla extract, and buttermilk.

Add the buttermilk mixture to the flour and combine.

Add the applesauce and mix.

Gently fold in the egg white into the mixture. Don't overmix!

Heat the griddle/pan over medium-high heat and grease with oil/butter. Gently pour small amount/dollop of batter on the griddle.

When the top is bubbling flip to cook the other side for about 1 minute or thereabouts until the pancake is cooked through. Repeat until you exhaust the batter.

- Apple (cored and diced)
- 2 Tablespoons Butter
- 2 Tablespoons Brown sugar

Place a saucepan/pot over medium-high heat.

Add butter and the brown sugar and combine.

Add the diced apples and combine. Cook until the apples are soft. That's it!
