Happy Easter! With Love and chocolate. Sending you all warm E-hugs, wishing you and your family joy, love, and cheerful Easter.
Avocado banana chips pop is on the menu today, so a few days ago the weather was good enough to have some popsicle. I always try to incorporate some vegetables or fruits that I know my kids don’t like in some of their meals or drinks. They don’t like avocado but they love to eat bananas, so I said to myself since they love popsicle and bananas let me add avocado to the blend and voila avocado banana chips pop was born.
We all know avocado is a good fat and is beneficial to our body:
- It prevents chronic disease
- Contains healthy monounsaturated fatty acids
- High in fiber
- Contains phytochemicals that concentrate in the tissues in the eyes
- Contains Vitamin K, to mention few.
Also, the dark chocolate is good for us too.
- 1 Avocado (halve, pitted and scooped)
- 1 Ripe Banana
- 1/2 Cup Freshly squeezed orange juice
- 1 Tablespoon Honey
- 1/2 Cup Dark chocolate
- 1/4 Cup Milk
-
Peel the avocado, cut into two pitted, and scoop the flesh into a blender.
-
Peel the banana, honey, and milk. Pulse to mix everything together.
-
Add juice and blend everything until it is smooth.
-
Better still, add everything except the chocolate chips and blend.
-
Pour into a popsicle mold
-
Top with the chocolate chips and mix. Freeze it, you can freeze overnight.
-
Enjoy!
