Carrot is one of our favorites vegetables, I mean it is one of the vegetables everyone gobbles with no complaint. Since everyone loves carrot there’s a need to switch it up in terms of how I prepare it and which led to these baked carrots fries.
We also love this Honey Roasted Carrots recipe you can check it out. This is a good way to make your little munchkins to eat more vegetables and I’m sure they will enjoy it. With this baked carrots fries, I don’t need french fries again…lol. That’s how good this carrot is!
These baked carrot fries are good for as a side; with chicken, burger, on its own. Serve it with ketchup or mayo dip sauce and let all the flavors burst into your mouth, typing this makes my mouth watering…lol
I love this carrot recipe and the best way to enjoy it is to make it crispy, so make sure it is crispy before taking it out of the oven. It is best served and eaten the day you prepare it, but if there’s a leftover you will need to pop it into the oven and make it crispy before you eat it again if not it will be soft.

Let’s get started!

Preheat the oven to 400 degrees F. Line a baking sheet with foil and place wire rack, spray with cooking oil or grease with oil and set aside.
Clean the carrot; scrap and cut the carrot lengthwise then cut like matchsticks size.
Coat with the flour and set aside.
Mix panko breadcrumbs, dried parsley, paprika, salt, and pepper.
Whisk the egg and milk, season with salt, and pepper.
Coat the floured carrot in the egg mixture (drain excess egg mixture)
Dredge in the panko mixture. Place on the wire rack. Continue the process until you’re done with the carrot.
Drizzle oil over the coated carrots and pop into the oven bake for 15 minutes or until crunchy.
You can also use cooking spray but I favor oil.
Serve with your favorite dip and enjoy! The recipe for the dip I used follows:
Combine Mayo, lemon juice, lemon zest, onion and garlic powders.
