This broccoli rice recipe is a very simple dish to make, it is healthy and doesn’t require too many ingredients. I’m not good at dieting as I have mentioned before in my other post but I make sure my family and I eat enough vegetables and broccoli is one of the vegetables everyone in my house will eat with no fuss, no muss.
So, in other to make broccoli more exciting especially the kiddos I always make it into rice which we all love. Broccoli rice is called broccoli rice of course, because it was made with broccoli if you’re not a fan of broccoli you can use cauliflower. You could turn the cauliflower into a fried rice dish. This is a great and very healthy dish at that.
If you want to twist things up in your kitchen try this broccoli rice recipe. I paired the broccoli rice with roasted carrot and proteins, you can serve it with whatever side you love. No matter what you pair it with you will love it.

One Pan Teriyaki Chicken With Vegetables
Tortilla Pesto Pizza With Shrimp
- 2 Head of broccoli head 1 pound yield 8 cups
- 2 Tablespoons Olive oil or butter
- 1 cup Onion chopped
- 1 Teaspoon Garlic powder
- Dash of Lemon juice
- Salt and pepper to taste

Add the cleaned broccoli into a food processor and pulse until you have rice grain size or use a knife and cut up the broccoli into small rice grain size.

Heat oil/butter in a sauté pan/pot over medium heat, add the onion and sauté until translucent then add the broccoli rice and stir. Juice some lemon juice out and set aside.

Cook until the color changes and the broccoli are tender about 2-3 minutes, for acidity splash some lemon juice and seasoning with garlic powder, salt, and pepper.

Take off the heat and serve.
