This caramelized onion mashed potatoes recipe is worth the time and it is a delicious meal, and cooking the onion requires time and cooking it on low heat; the result is well worth the effort. Coconut Curry Chicken with Potatoes
- 2 Tbsps Olive Oil
- 2 cloves Garlic (minced)
- 2 Yellow Onions (diced)
- 3 lbs Yukon Gold Potatoes (Russet, peeled or washed and cut into chunks)
- 3 Tbsps Unsalted Butter
- ¼-1/2 Cup Half & Half/fat free (or your favorite milk)
- Salt and pepper to taste

Heat a pan/skillet, over medium heat, and heat the olive oil.

Add in garlic and onions and stir them occasionally until the onions are browned and caramelized, the onion will reduce in size.

This will take approximately 30 minutes, add thyme and stir. Cook further for about 1 minute.

While the onions are cooking, peel the potatoes and cut them into chucks or wash the potatoes thoroughly and cut them into chucks.

Peel the skin from the onions and dice and set aside.

Add potato to a big pot and cold water to cover and cook until fork tender.

Drain the water from the potatoes (leave the pot on the stove and set the stove low heat) and mash them.

Add in the butter, half & half (or milk you’re using; start with 1/4 cup and add more later if needed to get your desired texture) and mash the potatoes again until all of the ingredients are fully combined, and the potatoes are smooth, season with salt and pepper.

Add caramelized onions to the potatoes, leaving about a quarter and set aside.

Stir the potatoes and onions are fully incorporated.

Add mashed potatoes to a big bowl and top with the remaining caramelized onions, butter/oil.
