Chicken lettuce wrap is on the menu today, it’s a new year and I know most people’s new year resolution is to shed some weight, even though some make it so hard on themselves and set goals which they don’t follow up and difficult to achieve. Don’t be too hard on yourself take it one day at a time, take it easy in whatever goals you set for your self. To lose weight is hard and not too hard if you set your mind to it, discipline yourself about the food eat and keep it moving, everything in moderation, even if you drink too much water at a time it would disturb you.
So for some of my readers that want to shed some weight here, you have chicken lettuce wrap, it is a delicious meal and doesn’t take time to prepare.
- 1.5 Pounds Chicken breast (cut into small pieces)
- 2 Tablespoons Vegetable oil
- 2 Tablespoons Soy sauce
- 2 Tablespoons Hoisin sauce
- 2 Tablespoons Rice vinegar
- 1 Tablespoon Freshly grated ginger
- 1 Tablespoon Garlic powder
- 1 Teaspoon Pepper flake
- Black pepper
- Cabbage for serving
- Celery stick; sliced for some crunch (for serving)
- Carrot julienned
- Green onion (chopped)
- Lettuce (your choice)
- Hot sauce for serving

Cut up the chicken

Marinade the chicken with hoisin sauce, soy sauce, rice vinegar, ginger, garlic and pepper flake. Marinate for at least for 1 hour.

Heat up the grill and grill the chicken on each side until cooked through, it took about 2 minutes on each side.

You can use any vegetables you like, these are the ones I had when I made this recipe. Cut the celery sticks and Julien/slice (2 sticks), carrot, cabbage, green onions.

Place a lettuce (I used Iceberg lettuce) on a plate drizzle hot sauce.

Add some chickens.

Add the vegetables in no particular order.

Add some more chicken and drizzle more hot sauce if you wish.

Wrap it up and take a bite. Enjoy!
Note:
You can use chicken thigh if you don't have chicken. Use any vegetable of your choice, you can make it your own, the way you like it.
