I call this easy pancake muffin because it is easy to make, you don’t have time for flipping pancakes? this pancake got you cover. It’s one of the breakfasts I love to make, in fact, my oldest daughter loves to make them for her siblings when I’m busy because it is not complicated just mix and pour it into a pan. You can make it ahead and it is easy to warm. This is an easy and good breakfast for busy weekdays. You can use disposable foil tin if you’re busy or don’t like to do dishes. Just mix the ingredients and pop into the oven. Make use any toppings or just make them without toppings.
- 11/4 Cups All-purpose flour
- 1 Cup Buttermilk
- 1 Large Egg
- 1/8 Cup Sugar (you can add more or less)
- 2 Tablespoons Unsalted butter (melted)
- 1 Teaspoon Baking powder
- 1/2 Teaspoon Baking soda
- 1/2 Teaspoon Vanilla extract
- 1/4 Teaspoon Sugar
- Toppings (your choice)

Preheat the oven to 400 degrees F.
Gather all your ingredients.

In a large bowl, add all the dry ingredients; flour, baking powder, baking soda, sugar, and salt. Set aside.

In a small bowl, add all the wet ingredients; buttermilk, melted butter, vanilla extract, and egg the whisk all together.

Add both wet and dry ingredients together, and mix to incorporate.

Spray the baking muffins pan with cooking spray, oil or butter.

Distribute the batter into the sprayed baking pan. Top the batter with your preferred toppings and bake in the preheated oven for 13 minutes or until the pancake has light golden brown on the edges and fully cooked in the middle.

Cool the pancake before you remove from the pan.
