Easy Spaghetti Recipe is on the menu today, this is one of the recipes you don’t want to miss because it is delicious as usual. I used mussels for this recipe but you can use any seafood, proteins of your choice. Also, feel free to use any type of pasta of your choice.
When I’m making spaghetti/pasta I like to pull the spaghetti from the cooking water then add to the sauce instead of draining then add cooking pasta water (if I need more). But you can drain the pasta if that’s what you like/convenient ( I do both)for you but don’t forget to save some of the pasta water. Let’s get started!
- 1 Packet Spaghetti (cooked)
- 1 Pound Mussels (clean)
- 1 Red bell pepper (deseed, and diced)
- 1 Tomato (diced)
- 1 Teaspoon Red pepper flake
- 1/2 Cup Broth
- 1 Onion (chopped)
- 1 Teaspoon Oregano (or any season of your choice)
- 2 Tablespoons Olive oil (or your choice)
- 1 Clove Garlic (minced)
- 1 Handful Kale (optional)
- Knorr (or any seasoning of your choice)
- Salt and pepper

Place a large saucepan/pot over medium-high heat, boil water. After the water is boiled season with salt and add spaghetti. Cook according to the packet instructions less 2 minutes of the cooking time. If the packet says 9 minutes cook for 7 minutes. Because you will continue the cooking in the sauce.

Place a saucepan/pot over medium-high heat and heat the oil.

Add onion, garlic, and oregano and saute for a few minutes until the onion is translucent.

Add the red pepper flake and toast for a few minutes.

Add the diced red bell pepper and tomato. Combine.

Add the broth and some amount of pasta water and mussels. Cook until the mussels are cooked (opened) then add kale. Add the knorr, salt, and pepper.

Add the spaghetti and combine cook for about one minute. Turn off the heat and on the heat residual.

Note:
If you're using mussels don't forget to clean, soak with water, salt and semolina/cornmeal.
