Pasta is a very versatile ingredient that I like to cook with, I’m sure when you guys are re-creating this fish rigatoni pasta you will understand better. This fish rigatoni pasta dish is very simple yet flavorful plus the vegetables that give the dish more texture.
Rigatoni pasta is just the name of the pasta used you’re free to use any pasta shape of your choice but make sure it is small shaped pasta because they’re mostly suitable for this dish. The sauce gets trapped into the pasta and spoonful of it in your mouth is heavenly with the sauce gushing out from the pasta and releases flavor into your mouth.
You can increase the sauce quantity of you desire and use any vegetable of your choice. Make sure you use mild-flavored fish and adjust the pepper to your level of tolerance.
You might want to try;
- 1 Pound Rigatoni Pasta (or your favorite) 1 packet
- 2 Cups Mariana Sauce (or any pasta sauce of your choice) (you can use more or less)
- 1 Cup Any white fish fillet of your choice (or more)
- 2 Green onions (sliced)
- 1 Big Onion (sliced)
- 2 Cloves Garlic (minced)
- 1 Teaspoon Fresh ginger
- 2 Cups Vegetable of your choice
- 1 Tablespoon Red pepper flakes (adjust to your preference)
- 1 Teaspoon Thyme
- 1 Tablespoon Fresh Parsley for garnish
- Bouillion powder/cube (optional)
- Parmesan cheese for garnish
- 3 Tablespoons Extra olive oil (or your choice)
- Salt and pepper
Gather all the ingredients, bring a pot of water to a boil over high heat, season with salt and cook the pasta according to the packet but make sure you cook it for about 90 percent because you're still going to continue the cooking in the sauce and you don't want your pasta mushy. Drain the pasta and reserve some water and discard the rest. Then set aside
While the pasta is boiling, place a large saucepan or pot over medium-high heat and caramelize the onion make sure the onion is not burned, add thyme, ginger, garlic and stir to avoid burning.
Add the Mariana or pasta sauce and combine, add the pepper flakes and cook until it reduces.
Season the sauce with salt and pepper add bouillon powder/cube if you're using and then stir in the fish and gently mix. Allow it to cook further for a few minutes until the fish is slightly cooked.
Add the cooked pasta, pasta water (depending on how long your pasta needs to cook further) and combine.
Add the vegetables and green onion, check the season and readjust if necessary.
Take off the heat and serve.
Garnish with parsley and cheese if you desire. Enjoy!
