Fried fish palm oil stew is a stew we all love in my house and it is simple to make, you might be familiar to frying stew with just vegetable oil, but if you try this stew you would be hooked. It is delicious and I made it with fried fish, dried prawn, dried fish and some boiled egg. You can use all of these or just anyone you want it doesn’t have to be the same type of fish I used, you can add more or use lesser, just make it as you would love to have it, if you want it spicy add more habanero/rodo, if you can take it heat reduce the habanero.
This stew doesn’t require any special seasoning. However, don’t use too much ground crayfish because you don’t want its flavor to overpower the taste of the stew. You can fry this stew as long as you want just don’t let it burn, the more you fry the better. Let’s get started!
- 4 Red bell pepper
- 3 Habanero/ Rodo
- 1 Cup Palm Oil (you can use more)
- 1.5 Onion (divided)
- 1 Cup Dried Prawn
- Dried fish (handful)
- 1 Tablespoon Ground Crayfish
- Fried fish (your choice)
- Boiled eggs
- seasoning cube/powder
- Salt

Remove the pepper stalks, deseed red bell peppers, clean and rinse.

Roughly blend the peppers with half of the onion.
Soak the dried fish and prawn with hot water and salt. Clean and set aside

In a saucepan or pot, add palm oil and heat over medium-high heat. Don't bleach but hot enough to sizzle when you add onion.

Add chopped onion and ground crayfish and stir, the smell in your kitchen would be heavenly at this time. Oh! I love the smell of frying onions...lol
Saute the onions for a couple of minutes but don't burn them.

Add the blended pepper mixtures and stir.

Fry for about 30 minutes, the frying time would vary because of some factors, if you add liquid and how low or high your stove, so keep an eye when frying so it doesn't burn.

Check and see if you have any oil floating, if there's any stir and add seasoning cube, dried fish, and dried prawn and fry for about 5 more minutes. I didn't add salt to the mixture yet because I used salt in frying the fish, so to avoid oversalting, I added salt after I added fish.

Reduce the heat to low and add fried fish, fry on low heat for about 15 minutes.

Check for salt and adjust the seasoning if needed, add the boiled eggs if you're using, fry for about 2 minutes and turn off the heat, leave the stew to simmer.

Serve with your favorite side.

Note:
If you're concern about too much oil, you can skim off the excess oil after frying.
