Gingerbread Cupcake (Baking with Kids)

Gingerbread cupcake is a delicious cupcake, which is great for Christmas menu.  It is moist and succulent, the aroma is out of the world, the smell in the kitchen while we were making it was divine. It’s festive period and I know most people had been planning before Thanksgiving if you can’t do a gingerbread house this gingerbread cupcake should be on your list for your dessert. I actually baked this gingerbread cupcake with the kids and we had fun making it hence the no frosting gingerbread cupcake, because they already wanted to munch on it while it was cooling down and was about to start with the frosting.

Servings: 12 Muffins
Ingredients
  • 1.5 Cups Flour
  • 1/2 Cup Molasses
  • 1/2 Cup Buttermilk
  • 1/2 Cup Sugar (adjust to your liking)
  • 1/4 Cup Unsalted butter @ room temperature
  • 2 Teaspoons Baking Soda
  • 1 Teaspoon Ginger
  • 1/2 Teaspoon Ground Cinnamon
  • 1/2 Teaspoon Vanilla extract
  • 1 Teaspoon Lemon Zest
  • 2 Eggs
  • 1/4 Teaspoon Ground Cloves
  • 1/4 Teaspoon Salt
Instructions
  1. Preheat the oven to 350 degrees F.


    Line the muffins pan and spray with baking spray.

  2. In a bowl, whisk, the baking soda, flour, salt, ginger, cloves, and cinnamon. Set aside.

  3. Use a stand mixer or a hand electric mixer to cream butter, lemon zest, and sugar, it takes about 1 minute or until it's fluffy.

  4. Add molasses, eggs (you might want to crack the eggs in a small bowl to avoid shell mixing with the ingredients), and vanilla. Incorporate all the together, for about 1 minute, pour in the buttermilk and dry ingredients little bit at a time. Mix everything together. Don't overmix.

  5. Divide the batter into the prepared muffins pan.

  6. Bake for 25 minutes in the preheated oven, or until the tester (you can use a toothpick) comes out clean.

  7. Let it cool before removing from the pan, if you're using decorating, let it cool completely before decorating.

Frosting
Ingredients
  • 3 Tablespoons Molasses
  • 1/2 Teaspoon Ground ginger
  • 1/2 Teaspoon Ground clove
  • 2.5 Cups Powdered sugar
Instructions
  1. Over a medium speed on a stand mixer or a hand mixer whisk all the ingredients and pour into a piping bag with the fitted decorating tip (shape of your choice). Decorate as you wish.
