This recipe is very basic and delicious, I used cream cheese make sure it’s softened before using it. I used dried thyme but you can use any other herb like chive, parsley or your choice or the mixture of herbs, you can use the fresh herb too.
- 5 medium potatoes (peeled, and cubed)
- 4 oz. Cream cheese (soften)
- ½ Cup whole milk (or more)
- 1 Teaspoon Thyme (fresh/dry)
- 1 Teaspoon lemon zest
- 1 Teaspoon olive oil/butter
- Salt and pepper to taste

Peel, cube, and rinse the potatoes. Add to a pot/saucepan and cover with cold water, season with salt and cook the potatoes until fork tender.

Drain and the water and add the potatoes back to the pot and allow the water to dry (if there’s any).

Add all the remaining ingredients except the oil and pepper. Mash the potatoes when done season with pepper and drizzle oil over it.
Tip: If you’re not ready to eat it, just make a hot water bath by cover the mashed potatoes and place in hot water allow to simmer until you’re ready.
