Nigerian Fried Yam and Stew

Happy New Month! I pray that you receive all you’ve been working towards,  praying and hoping for since the beginning of the year Almighty God will grant them onto you. I’m going to show you how to make Nigerian fried yam and stew (Dundun and Ata Dindin) today.

Fried yam is very popular street food in Nigeria, it is usually sold with Akara some sells with beans and stew. Fried yam is one of my favorite street foods. So, today I’m showing you how to make Nigerian fried yam and stew (Dundun and Ata Dindin) at home.

It is very easy to make just peel the yam, and cut into your desired shapes but it is very important that you fry it on low heat. If you fry on high heat you’ll end up cooking only the outside and not the inside of the yam. Also, the yam doesn’t take a long time to cook, when you see that the yam is lightly brown and you can pierce a fork through it without any resistance then it is cooked.

How To Make Fried Yam and Stew (Dundun and Ata Dindin)
Ingredients
  • 1 Tuber Yam Peeled and cut into rectangles or desired shapes
  • Salt to taste
  • Enough oil for frying
Instructions
  1. Peel the yam, slice and cut to your desired shapes. I cut mine into rectangular shapes. Rinse until clean then cover water and add salt. Allow the yam to sit for about 5 minutes.

  2. Heat oil in a shallow pan or pot over medium-high heat. Drain the water or just use a strainer and remove the yam. Be careful when doing this as water and oil don't go well. Gently add the yam to the oil, add about 1-/8 - 1/4 cup of salted water that you removed the yam from to the yam depending on the quantity of yam you're frying.

  3. Reduce the heat to low heat and cook. Make sure the heat is not on high heat if not the yam won't cook on the inside. Fry on both sides until lightly brown, once you pierce the yam with a fork and it goes through without forcing it, it is cooked. The longer you fry the crispier/drier the yam becomes and you don't want that. You just want it lightly brown unless you want it dry.

  4. Drain, serve with stew.

Stew (Ata din din)
Ingredients
  • 2 Roma tomatoes
  • 1 Rodo
  • 1 Big Red bell pepper (about 1.5 of the normal size)
  • 1 Small Onion (chopped)
  • 1 Small Garlic clove
  • 1 Teaspoon Fresh ginger
  • 2 Green onions (optional); diced
  • Seasoning powder/cube
  • Salt to taste
  • 1/4 Cup Vegetable oil or palm oil
  • 1/2 cup Diced fried chicken (use any protein of your choice)
Instructions
  1. Clean, red bell pepper (tatashe), rodo, ginger, garlic, half of the onion, rinse and roughly blend if possible without water. You can also chop with hand if you wish then grate the ginger and garlic.

  2. Heat oil in a saucepan, saute the remaining half onion (chopped) the add chopped /blended pepper. Fry until the pepper reduces in size. Season with salt and seasoning powder and stir.

  3. Add the chicken (or any protein you're using), diced green onions and combine. Continue to fry until the oil floats. Check the seasoning and readjust if necessary.

  4. Serve with fried yam.
