Mackerel fish stew is a very simple stew and tasty stew that can be enjoyed with rice, yam, swallow like amala, eba or anyone of your choice. You can use either palm oil or vegetable to make this stew.
To know the real mackerel fish, it looks white, if it’s black as in the white part is not white enough then it’s a “counterfeit”.

Let’s get started!
- 4 Mackerel fish (cut into steaks, gutted, and rise)
- 10 Tomato (I used Roma)
- 1 Big Red bell pepper
- 2 Habanero/Rodo (use more or less)
- 1.5 Onions (divided)
- 1 inch Ginger (minced)
- 1 Teaspoon Thyme
- Palm oil/Vegetable oil
- Seasoning powder/cube

Cut the fish to steaks, remove the intestines and rinse. Season salt and seasoning powder/cube let it marinade for at least 30 minutes. The real mackerel should be white if it's not white it's can be the same.

Fry or bake if you wish. I bake until golden brown and set aside. You can also cook the fish without frying or baking.

Get the peppers, deseed the red bell and habanero, rinse, cut into small pieces and blend with one onion, blend until smooth.

For this step, you can either boil until the pepper mixture is thickened, or cook when it is added to the oil.

Place a large saucepan/pot over medium-high heat and add oil, allow it to get hot. Add thyme and the remaining onion (whole) and fry until the onion releases its fragrance. Your kitchen will smell heavenly; I love the smell of frying onion...lol. Remove the onion and discard.

Add the blended pepper and cook until the content is thickened about 15-20 minutes or until the oil floats. The time will to cook will vary depending on how much water you added when blending. I didn't add water because my blender can blend without adding water.

Add the fish cook for about 10 minutes to absorb the pepper mixture, check the seasoning and adjust it if necessary. Lower the heat and allow to simmer for about 20 minutes or more until it gets to the consistency you want.
