Mexican rice is another way to change things up when you want to try something new with rice. It comes together easily and it’s a quick fix, too. I added peas and carrot but you could add roasted corn which is a very good addition.
Mexican rice has different variations in term of cooking. You could add cheese, cook it in tomato sauce, vegetables could be added or nix it, you decide if you want to add vegetables or not. This rice dish is better than a restaurant bought. There are other rice recipes you might want to check please check them. Serve this rice with black beans, salsa, tortilla, avocados or whatever side you want.
You might want to try;
- 2 Cups Long grain rice (rinse and drained)
- 1 Cup Shredded cheese
- 1 Cup Peas and carrot
- 2 Tablespoons Butter or Extra olive oil
- 2 Cloves Garlic (minced)
- Broth or water for cooking
- 1 Onion (diced)
- 1 Teaspoon Chili (adjust to your preference)
- 1 Teaspoon Cumin
- 1 Tomato
- 1 Green onion for garnish
- Lime wedge for garnish
- 2 Tablespoons Cilantro (chopped)
- Salt and pepper to taste

Rinse the rice, and set aside. Place a skillet over a medium and melt the butter or heat the oil if that's what you're using. Add chopped onion and saute for a few minutes. Add minced garlic and stir.

Add the peas, carrot, cumin, and chili. Stir and combine everything.

Add the rice and combine. Add the broth just enough to cover it, season with salt and pepper cover and bring to a boil then allow to simmer.

Chop the cilantro, tomato, green onion and set aside.

After the rice is done, sprinkle the cheese, tomato, cilantro, and green onion then allow to steam for a few minutes.

Serve, feel free to add lime juice to it.
