Nigerian fried rice with shrimps is the same food as normal Nigerian fried rice with a twist of adding shrimps to it. Fried rice is a well-known dish and among the food served at Nigerian parties, any party without fried rice is not complete (I’m kidding)… Some serve it with a portion of jollof rice, salad with protein, or just with protein.
To prepare fried rice you need to chop all the fresh vegetables that you will be using before you start to cook, you can also use frozen vegetables too. I have some other fried rice recipes posted on the blog, I’ll link some you can also search for more.
You might want to try;
- 1 Cup Carrot
- 1 Cup Sweetcorn
- 1 Cup Green beans
- Green peas
- 4 Cups Long grain rice ( you can any of your choice)
- 2.5 Cup Chicken broth
- 1 Pound Shrimps (peeled, deveined and tail off)
- Seasoning cube
- Liver (boiled and diced)
- Thyme
- White pepper
- 1 Teaspoon Ginger powder
- 1 Teaspoon onion powder
- Curry powder
- 1 Onion
- Vegetable Oil
- Salt to taste

Chop all the vegetables or thaw if you're using a frozen one and set aside.

Clean up the shrimps and marinate with seasoning cube and salt. Dice up the liver.

Place a pot over medium heat, add vegetable oil like a quarter cup (1/4 cup) and let it hot.

When the oil is hot, add onions and fry for about 1 minute add the seasoning, thyme, curry, white pepper, ginger, and fry for about 2minutes or until the seasonings release fragrant.

Add the chopped vegetables

Throw in the marinated shrimps and fry until the shrimps color changes and cooked. Add cooked and diced liver and mix together.

Remove from the pot.

Wash the rice (until the water runs clean) and drain. Add the rice to the pot (same pot you used for the veggies) and fry (you can add more oil if you need more).

Add the chicken broth, just enough to cover the rice.

Get the seasoning cube, salt and add to taste. Cover and cook until tender (not too soft)

When the rice is tender add the veggies and mix. If you like onions like me slice up some onion and mix everything together.

Adjust the seasoning and reduce the heat and let it simmer.

Serve and Enjoy.
Note: You can add habanero(rodo), and/ green or red bell pepper to the number of veggies you want to use. You can make it with chicken or beef.
