Avocado Toast with Poached Egg
Zucchini and Sausage Egg Muffins
- 2 large eggs
- 1 Tbsp unsalted butter
- 2 Tbsps Milk
- salt and pepper to taste
- 1/4 cup shredded mozzarella (or your choice)
- Fresh spinach
- Pinch of red pepper flakes (optional)
- 2 Tbsps Roasted bell pepper/Roma tomatoes (diced)
- 1 Cooked Turkey Bacon (chopped)
- Avocado (diced)
-
In a small mixing bowl/cup, beat eggs, milk, salt, and pepper until foamy. You can season with salt only then add black pepper when the omelete is done.
-
Place a small nonstick pan over medium heat and add butter; ensure the butter coats the side of the pan. Allow the butter to melt and bubble, add eggs to the skillet, and immediately reduce the heat to low.
-
Use a spatula to pull or lift the cooked eggs to the side, letting the uncooked egg fill the space underneath it. Continue going around the pan, pulling the eggs towards the side/center until the eggs are almost set.
-
When you notice the omelet sliding around the pan easily, you can get a spatula underneath, flip the omelet over, and turn off the heat.
-
Sprinkle cheese on one side of the egg or over the egg.
-
Add spinach, pepper flake (if you're using it), roasted bell pepper, chopped bacon, and tomatoes (or any topping of your choice). Fold the omelet in half; the heat will melt the cheese, then slide it onto your plate and garnish it as desired.
-
Serve and enjoy!
