Peanut butter ramen noodle is a budget-friendly meal. It is made with peanut butter, ramen noodles, soy sauce, oil, vegetables, and other seasonings. I love this peanut butter ramen noodles because it is the easiest thing to cook apart from boiling water…lol.
I used shrimps, by now you should know I love shrimps, but you can use any protein of your choice you can make this peanut butter ramen noodles with any protein or without protein and still a bowl of deliciousness.
Simply add any vegetables of your choice, I used coleslaw mixture (pre-chopped) and broccoli that I had at hand. That’s one of the reasons why I like this peanut nutter ramen noodles, you can basically throw in any vegetables of your choice.
I love the coleslaw mixture because it will blend together with the noodles and this is good for those that don’t like to eat vegetables.
You might want to try;
Homemade Peanut Butter (Two Ways)
- ½ Pound Shrimp (peeled, and deveined)
- 4 Packets Ramen noodles (discard the seasonings)
- 1.5 Cup of coleslaw mix (or vegetable of your choice)
- 1 Small bunch broccoli
- 3 Tablespoons Sesame oil (or your choice; divided)
- 1 Teaspoon Red pepper flake (adjust to your heat tolerance)
- 2 Tablespoons Honey
- 2 Tablespoons Low sodium soy sauce
- 1-2 Teaspoons Creamy Peanut butter (or less if you wish)
- Dash of hot sauce (optional)
- Salt and pepper

Bring a pot of water to a boil and empty the noodles into it and cook, it should be about 90 percent cooked if not it will be soggy, drain and set aside. Make sure you discard the seasoning that comes with each packet.

Clean the shrimp, season with salt and pepper and set aside

Whisk the peanut butter, soy sauce, honey, a tablespoon of oil and set aside. If you desire you can use less peanut butter you can use about a teaspoon at first and work your way up if you think you need more.

In a wok or pan, heat the remaining oil, over medium-high heat, add the seasoned shrimps and cook for 1-2 minutes and remove.

Add the vegetables into the same pan and combine and allow to warm up.

Add red pepper flake, shrimps, peanut butter sauce and noodles. Combine and allow to warm up. Check the season and readjust if necessary. If you want it loose or you want some liquid just reserve some cooked ramen water and add to the mixture.

Serve, you can garnish with crushed peanut or green onions.

You can also use pasta in place of the noodles.
