I have been obsessed with pineapple for a few days now, so pineapple bbq chicken is one of the dishes I made with the pineapple a few days ago. I would share others later!. Pineapple bbq chicken with the sauce scooped over rice is everything, some of my troupers had theirs with mashed potatoes with some vegetables …hmmm delicious!.
You can use a fresh or canned pineapple, adjust the sauce quantity to your preference, the quantity I used was just enough to eat the chicken with the side dish. Try this out and let me know what you think of it in the comment sections.
If you want more sauce double the pineapple juice or combine with chicken stock
Let’s get started!
You might want to try;
- 2 Pounds Chicken thigh (skin-on, and bone in)
- ½ Cup BBQ sauce
- 2/3 Cup Pineapple juice
- 10 Pineapple slices
- 2 Tablespoons Olive oil
- 1 Tablespoon Oregano seasoning
- 1 Tablespoon Garlic powder
- 1 Tablespoon Onion powder
- Salt and pepper

Preheat the oven to 400 degrees F

Clean and pat the chicken dry.

Season with ,onion, garlic powders, oregano, salt, and pepper

Place a skillet or an oven proof pan over medium-high heat and add the oil

Add the seasoned chicken and brown both sides. Skin side down first and brown the chicken on both sides.

Get the pineapple and juice ready while the chickens are browning. Remove the chicken after browning on to a clean plate.

Pour the pineapple juice and mix make sure you scrape out all the chicken that sticks to the bottom.

Add the BBQ sauce and mix.

Return the chicken and scoop the sauce over the chicken. Skin side up, scoop the sauce to cover the chicken.

Place the sliced pineapple over the chicken.

Place the skillet in the preheated oven and bake for 30 minutes or until the chicken is fully cooked. Baste the chicken the sauce half way done or every 10 minutes.

During the last 5 minutes change the oven to broil and let the pineapple caramelize a little bit.

Remove and serve with mashed potatoes and veggies or rice or any of your choice of side dish.
