Plantain, Vegetable, and Beans

Today’s recipe is about beans… yeah! beans! Not everyone loves beans but if you try this beans recipe you’ll change your mind about beans, this plantain, vegetable, and beans is that good, delicious, and tasty. It has vegetable, fish, and ripe plantain now tell me what’s not to love?

You can prepare this plantain, vegetable, and beans in a slow cooker, pressure pot or on a stove top. Tip to cut the cooking hours down if you’re using a stove is to soak your beans for sometime before cooking. Also, boiling for a few minutes, drain, rinse then add another water before you start the full cooking is good for reducing heartburn or being bloated.

You can also use black eyed-peas (Ewa fufu), feel free to use as little or as much palm oil as you want.

Plantain, Vegetable, and Beans
Ingredients
  • 1.5 Cups Honey brown beans (or black-eyed peas)
  • 1 Ripe Plantain (thinly sliced)
  • 1 Onion (chopped)
  • 3 Tablespoons Boiled pepper mixture
  • ½ Cup Spinach (fresh or frozen)
  • Grilled fish (optional)
  • Palm oil/vegetable oil
  • Seasoning bouillon powder/cube
  • Salt to taste
Instructions
  1. Pick the beans by separating the beans from stone or any dirt from the beans. Rinse under cold water, add to a pot then cover with water boil for about five minutes then rinse with

  2. Cover with cold water, about 2 cups of water, onion then boils in an instant pot or on a stove until it softens to your preference.

  3. Add the sliced plantains and continue to cook, seasoning with salt. You can boil the plantain with the beans from the beginning or add to it at the end. I like it both ways all I want is the plantain to soft.

  4. Place a skillet /pot over medium-high heat, add palm oil/vegetable oil and allow to get hot (not smoking hot), add chopped onion and fry until translucent. Add the boiled pepper and continue to fry.

  5. Add the grilled fish (if you’re using). Seasoning with seasoning cube/powder and salt. Remember you already added salt to the beans.

  6. Mix the pepper and beans mixture together. Allow the mixture to cook together for about five minutes or more on low heat.

  7. Add the vegetable and combine and let it warm up, check the seasoning and adjust accordingly.

  8. Serve and enjoy!
