Happy Monday everyone! On today’s menu is pizza, I’ve shared some pizza recipe before I will link them below. How to make the dough and the sauce will be included below. Personally, I really don’t like too many toppings on my pizza but my kids are opposite of that.
For pizza toppings, you can basically use any toppings of your choice. In this recipe, I used mushroom, chicken breast from Herb Roasted Chicken, pineapple, bell pepper (I used 3 colors), onions. So, you can add whatever that suits your tastebud and as little or as many as you want.
- 1 Pizza dough
- Pizza sauce
- 1 Cup Chicken (shredded)
- 1 Cup Pineapple (diced)
- 1/2 Cup Mushroom (sliced)
- 3/4 Cup Bell pepper (sliced)
- 1/2 Cup Onion (sliced)
- 3 Tablespoons Olive oil (or your choice) divided
- 1 Cup Mozzarella Grated Cheese
- 2 Tablespoons Corn meal
- 2 Tablespoon flour (or more)
- Salt and pepper

Arrange the ingredients, dice, slice where it is applicable.

Heat a tablespoon of oil in a skillet or saute pan over medium heat. Season mushroom with salt and pepper then add to the skillet and brown on both sides about 2-3 minutes. Set aside.

Preheat the oven to 500 degrees F.
Grease your baking pan (I used 14'' pizza pan) with oil and sprinkle the cornmeal over it, shake to allow the cornmeal to get to all the pan.

Dump a pizza dough on a floured surface.
Use a rolling pin to roll the dough out.
Pick up the dough and gently stretch, you can hold your hand into a fist and place the dough over it, if you can, throw it up or just use your second to stretch the dough out.

Place the stretched dough onto the pan, brush the remaining oil over the dough.
Add the pizza sauce (link to the sauce recipe is included) and spread over the dough leave some space (if you desire) on the edge of the pizza.
Top with cheese, add chicken.

Add the bell pepper, mushroom, pineapple, and onion or any topping you’re using.

Pop it in the preheated oven and bake for 10-15 minutes or until the cheese bubbles or the cheese melts.

Let it cool down and slice.
