To change things up for the kids and everyone I made this sausage and pancake bites and oh boy was it a hit? Yeah! It was gone and a jiffy and everyone was asking for more, yeah, that was how good the sausage and pancake bites were.
The recipe I used for the batter was similar to one of the pancake recipes I shared already, I will link some below if you would like to check them out. For this sausage and pancake bites, I used the regular sausage but you can use any type you desire.
Turkey, pork, sausage link, breakfast sausage links could also be used. Just remember to remove the casing before using. This sausage and pancake bites are so delicious and it doesn’t take time to make. As I always say you don’t have to eat the same food the same way. Give this sausage and pancake a try and see how everyone will come back for more.
I used US Metric, for easy conversion use Cooking Conversions
You might want to try;
- 6 Beef Sausage (cut into four each)
- 1.5 Cups All-purpose flour
- 1 Cup Whole Milk (or your choice)
- 1 Teaspoon Baking powder
- 2 Teaspoons Baking Soda
- 2 Eggs
- 1 Teaspoon Vanilla extract
- ½ Teaspoon Ground Cinnamon
- 1 Tablespoon Sugar (you can use more)
- ½ Teaspoon Salt
- Oil for frying

Remove the sausage from the package and cut into four each or your desired size, microwave for about 1 minute to warm up, drain and pat dry with the kitchen paper towel then set aside.

If the sausages are hot make sure they cool down before you start the process.

Combine all the dry ingredients; flour, ground cinnamon, sugar, salt, baking powder, and baking soda then set aside.

Whisk eggs, milk, vanilla extract and pour into the dry ingredients, mix and set aside.

Heat enough oil in a frying pan and allow it to get hot.

Drop some of the sausages into the batter and coat, you can use a toothpick or fork to lift the sausage and gently lower it into the oil, don’t overcrowd the oil.

Fry on both side about 1 minute and drain onto a paper towel, repeat the process until you exhaust the batter.

Depending on how much you drain the batter, the outside might be smooth or not, either way, each bite was a hit.

Serve with maple syrup or fruits or just as is and enjoy!
