Happy New Month my Fanmily! It’s February… wow! This year is moving so fast. I was chatting with a friend and we were talking how fast January was moving and she jokingly said this year has been used before…lol that’s why it’s moving so fast I can’t but laugh out loud. Do you agree with her?…lol. I’m wishing Y’all a fantastic and rewarding month!
Today’s recipe is shrimp and vegetable waffle, by now you should know how much my family and I love shrimp…lol. Growing up my mom was into a food catering business, now you know where the love of food started…lol after I moved to the US I worked in a restaurant where I gained more incredibly knowledge from the great chefs and good people around me. So, combining vegetable, shrimp or some food you would not think of started from there too.
On this fateful day, my oldest daughter Ola was asking for the next day breakfast and started checking the pantry and refrigerator and was telling what she saw and would like to eat and others were saying another food then I said okay, let just combine shrimp, vegetables, and make waffles… and Voila shrimp, vegetable waffle came to life and was a hit!
Shrimp and vegetable waffle could be also served as a brunch/dinner just throw in some salad and you would love it. This shrimp and vegetable waffle is what you should try next and hope you enjoy it as much as we all did. It is healthy, simple, and delicious.
Throw in any vegetable of your choice, green beans, peas are great addition too. Make sure you chop the shrimp small and season along with other vegetables. Drizzle the Shrimp and vegetable waffle with syrup or make some eggs and serve as a sandwich…Yum!

Parmesan Waffle With Ground Beef
- 1.5 Cups All-purpose flour
- 1.5 Cups Whole Milk (or your choice)
- 2 Eggs
- 12 oz. Fresh/frozen Carrot and Sweet corn
- 1 Pound Shrimp (peeled, deveined, and chopped)
- 3 Green onion (chopped)
- 1 Tablespoon Baking powder
- 1 Tablespoon Vanilla extract
- 1 Teaspoon Salt
- Salt and pepper to taste

Combine the dry ingredients; flour, salt, and baking powder and set aside

If you’re using frozen vegetable thaw it by running under cold water, drain and set aside. If you're using fresh vegetables clean, chop and set aside.
Clean the shrimp then chop, also chop the green onions too.

Season chopped shrimp, thawed vegetables and green onion with salt and pepper then add to the flour mixture.

Whisk up the egg, vanilla extract, and milk together and add to the shrimp flour mixture, combine and set aside.

Heat the waffle maker spray with cooking spray or grease with cooking oil and scoop the mixture and cook according to the waffler maker instruction.

Repeat the process until you’re done with the batter.

Serve with maple syrup, or egg or your favorite side.
Serve with salad if serving as brunch/ lunch/dinner.
