Spatchcock Bbq Chicken is a very simple chicken recipe to make when you cut open the chicken this help with seasoning to get to every nooks and cranny of the chicken and also cooking it is also easy. You could prepare this on a grill or inside the oven.
Cutting the chicken is very easy if you go by the instructions. Make sure you clean the chicken and pat dry, place the chicken on a clean surface make sure you line the surface and nothing around the surface you could possibly contaminate with the chicken.
Use kitchen scissors to remove the rib bones. Cut from the backbone from the neck down towards the leg. Cut it down and remove the backbone you can save it and use it for soup or broth. Then cut a small bone from the cartilage in the middle of the breastbone this will show the breastbone then flip the chicken and press the bone side down to flatten it.
Barbecue Chicken (Nigerian Barbecue Chicken)
- 1 (4-5) Lbs Whole Chicken
- 1 Cup Barbeque sauce
- 1/2 Cup Butter (1 stick)
- 3 Teaspoons Sweet paprika
- 2 Teaspoons Ground black pepper
- 3 Teaspoons Garlic Powder
- 2 Teaspoons Oregano
- 1 Teaspoon Cumin
- 1/2 Teaspoon Ground coriander
- Salt

Clean the chicken, trim off any excess fat and pat dry turn the chicken breast down and the rib side up. Use kitchen scissors to remove the rib bones. Cut from the backbone from the neck down towards the leg. Cut it down and remove the backbone you can save it and use it for soup or broth. Then cut a small bone from the cartilage in the middle of the breastbone this will show the breastbone then flip the chicken and press the bone side down to flatten it.

Preheat the oven to 400 degrees F. You can also use a grill too. Mix all the ingredients except the barbecue sauce.

Rub everything on the chicken on both sides.

Place the seasoned on a baking sheet and roast for about 25-30 minutes.

Brush the barbecue sauce in and out and return the chicken to the oven and baste the chicken after 10 minutes, take it out again for the last time and baste it. When the temperature reads 165 degrees F it is done.

Remove it allow to rest for about 10 minutes.
