Stewed seafood okra soup is a Nigerian soup, you can cook it with stew (ila alasepo) as in this recipe or cook okra on its own and serve with the stew that is cooked separately. I used just shrimps and mussels but feel free to use any kinds of seafood, or protein of your choice. If you want okra chewy roughly chopped the pods or blend to the consistency you like or use the combination of roughly chopped and blended one. Adjust the habanero to your level of tolerance. Okra soup can be eaten with any type of swallow, rice or by itself. Let’s get started!
- 4 Cups Okra pods
- 1 Pound Mussels
- 1 Pound Shrimps (peeled, deveined, tail on/off)
- 1/2 Cup Shredded dried fish (optional)
- 1 Tablespoon Ground Crayfish
- 1 Red bell pepper
- 5 Habanero/rodo (adjust to your preference)
- 1 Onion (chopped)
- Locust beans (iru)
- Seasoning of your choice
- Palm oil
- Knorr bouillon/powder
- Salt to taste

Clean the okra and chop/blend to your preference.

Clean the peppers and remove the red bell pepper seeds. Roughly chop/blend the peppers and set aside.

If you're using the shredded dried fish soak in hot water with salt for a few minutes rinse and set aside.

Place a medium-size saucepan/pot over a medium-high heat. Add palm oil, you can use as much or small oil as you want. Let the oil get hot but not smoky hot.
Rinse the locust beans (iru) with water and set aside.

Add the chopped onion and saute for a few minutes.

Add the locust beans (iru) to the onion and stir.

Add the ground crayfish and continue to stir.

Add the shredded fish if you're using and mix.

Add the blended pepper and mix. Cook the pepper mixture until it thickens.

While the pepper is cooking, boil the shrimps with knorr, salt and any seasoning of your choice.

Also boil the mussels with knorr, salt and seasoning of your choice. Don't discard the broth form the mussels and/shrimps you will need the broth.

Add the boiled mussels and shrimps to the cooked pepper mixture. Mix to combine. Loosen the mixture with the seafood broth or water. Put in mind the consistency you want when adding broth/water.

Add the chopped okra and mix. Add knorr and salt to taste.

Cook for about 3 minutes to the consistency you want. Check the seasonings and readjust if necessary.

Note:
Don't forget to clean your clams, mussels or seafood you're using before cooking. You can soak the clams with water, salt, and semolina/cornmeal, this allows the clams to spit out the sand, you can do it overnight. Soak mussels for about 20 minutes, scrub the mussel and remove the beard. Run cold water the mussels under cold water.
