Stuffed Plantains With Caramelized Onions and Baked Fish

Stuffed plantains with caramelized onions and baked fish, oh so delicious!. Roasted plantain is delicious as a meal or as a snack and this caramelized onions and baked fish raise the plantains deliciousness bar…lol.  Almost anytime I go to the store and buy some plantains (some people call it big banana) people ask me how do you cook it or do you eat it raw? and I would explain or describe it and they would go wow! you can actually see the excitement or would I say surprise on their faces. But lately, some food shows feature plantains in their recipe/food.

It is easy to make and can be made in different ways. You can boil, roast,  fry, add to other food like beans, to make swallow and so on. Plantain is a common street food in Africa, roasted plantains (boli) with peanut (epa) was one of my favorite street food back home, but this stuffed plantain is a real deal. Hope you would try it out. If you don’t like fish use minced or ground meat or turkey or any protein of your choice.

Baked Fish
Ingredients
  • 2 Fish (gutted and clean)
  • 2 Teaspoons Curry powder (or any seasoning of your choice)
  • 1 Teaspoon Thyme
  • 2 Tomatoes (sliced)
  • Seasoning powder/cube
  • Onion powder
  • 1 Red bell pepper (sliced)
  • 2 Sticks Green onion (chopped)
  • 1 Onion (sliced)
  • 1 Teaspoon Pepper flake
  • Salt
Instructions
  1. Clean the fish by removing all the intestines, cut the fins and rinse. Pat dry.

    Preheat the oven to 400 degrees F.

  2. Slash the fish (not too deep) with a sharp knife.

  3. Season the fish with the salt, curry powder (or any seasoning you're using), onion powder, thyme, pepper flake, seasoning cube, and salt.

  4. Place the fish in a foil grease with cooking spray or oil to avoid sticking. Add red bell pepper and green onion.

  5. Pour over the sliced onion and tomatoes over the fish and cover the fish.

  6. Bake the fish for 30 minutes or until fully cooked.

Note:

You can use any type of fish you like.

Stuffed Plantains With Caramelized Onions and Baked Fish
Ingredients
  • 3 Ripe Plantains
  • 1 Tablespoon Butter
  • 1 can Tomato
  • 1 Onion (chopped/sliced)
  • 1 Baked fish (shredded)
  • Salt
Instructions
  1. Preheat the oven to 400 degrees F.

  2. Peel the plantains, rub the butter/oil all over the plantains and sprinkle salt (optional) over the plantains.

  3. Roast the plantains in the preheated oven. You can place the plantains on the baking rack or over the lined baking sheet with foil and (also grease)  then place the plantains.

  4. Roast for about 20 minutes or until golden brown. You can flip/turn and bake the other side of the plantains but mostly I broil for about 7 minutes until it's golden brown. You can turn the plantains and roast for about 8-10 minutes.

  5. When the plantains are all roasted, let it cool down. Slit down roasted plantains

  6. Stuff the plantains with the caramelized onions and baked fish.

Caramelized Onions and Baked Fish
Ingredients
  • 1 Big Onion (thinly sliced)
  • 14.5 oz Diced tomatoes (fresh or can)
  • 2 Tablespoon Olive oil
  • 1 Tablespoon Balsamic Vinegar
  • 1 Tablespoon Garlic powder
  • 1 Tablespoon Onion powder
  • 1 Teaspoon Minced ginger
  • Seasoning powder/cube
  • 1 Baked fish
  • Salt to taste
Instructions
  1. Place a skillet over medium-high heat. Add minced ginger and onion, stir and saute until it's brown but not burn, it took about 15 minutes or more. If you think it's burning reduce the heat. Sprinkle salt over the onion to get the water out of it.

  2. Add the remaining ingredients except for the fish and salt.  Continue to stir so it doesn't burn. Cook for about 10 minutes or more.  You don't want any liquid in the mixture.

  3. Debone the fish and add it to the mixture and continue to stir, add salt and continue to stir. Check for the seasoning and readjust. Take it off the heat, let it cool and stuff the plantains

Note:

If you like it spicy, add some when you add the other ingredients and cook along together.
