Thai Rice Recipe

Thai rice recipe is a very easy recipe, my Thai rice recipe used leftover or already cooked rice, you see why I mentioned that it is a very easy recipe. If you have leftover rice this is a very recipe to make. The sauce elevates the taste of the rice, the coconut milk addition is also good.

I added some mixed vegetables but you can use any vegetables of your choice. The rice was served with egg and some slices of cucumber. I have other easy rice recipes you will love I hope you check them and try them out.

Ingredients
  • 4 Cups Cooked Rice
  • 1 Can Coconut milk (13.5oz)
  • 1/2 Cup Onion (diced/chopped)
  • 2 Tablespoons Coconut oil (or your choice)
  • 1/2 Pound Beef (diced.strip)
  • 2 Tablespoons Red curry paste/sauce (more or less)
  • 2 Green onions (chopped)
  • 1 Small piece fresh ginger (minced)
  • 1 Clove Garlic (minced)
  • 1/2-1 Cup Mixed vegetables (or your choice)
  • 1 Teaspoon Basil (chopped)
  • Salt and pepper
  • Eggs for serving (optional)
Instructions
  1. Clean the beef and dice up or cut into strips. Season with salt and pepper and set aside. If you're using frozen vegetables thaw, drain and set aside. If you're using fresh clean, chop up and set aside.

  2. Place a wok/pan over high heat and cook the beef on both sides.

  3. Add garlic, ginger, and onion then combine. Cook for a few minutes then add the Thai paste/sauce and cook until fragrant. Add the coconut milk, basil and bring to a boil. Reduce the heat and simmer until the mixture thickens enough to coat the rice without excess sauce flowing around unless if you desire to have some sauce with it.

  4. Add the cooked rice, green onions, vegetables, and stir, season with salt and pepper.

  5. Allow all the mixture to heat up.
