Vegetable Egg Sandwich – a perfect blend of nutrition and taste. Whether you’re looking for a quick and easy breakfast or you want something else to eat rather than a boring toast or cereal, this sandwich has got you covered.
Start your day with a sandwich that’s packed with protein from fresh eggs and loaded with vitamins. Not only is this sandwich delicious, but it’s also incredibly versatile. You can customize it with your favorite veggies like tomatoes, spinach, bell peppers, and avocados.
I used two types of cabbage, but you can use one if that’s what you have. You can use your favorite crusty bread. I didn’t measure the cheese I used; depending on how cheesy you want, add as much or as little as you want. So grab your bread, gather your favorite veggies, and get ready to elevate your breakfast game with these delicious Vegetable Egg Sandwiches!

Turkey Breast and Apple Sandwiches
- 4 Slices Wheat bread (or any crusty bread of your choice)
- 2 tbsps Mayo/butter
- 4 tsps milk (your choice)
- 4 Eggs
- 1/3 cup onion diced
- 2 tsps Olive oil (your choice)
- 1/3 cup green, purple cabbage, and carrot shredded
- 1/2 tsp paprika
- Provolone cheese slices/shredded cheese (your choice)
- Salt and pepper to taste

Clean the vegetables and thinly slice or dice.

Place a big non-stick pan on medium heat and heat oil. Add the vegetables and cook for 1-2 minutes or until you get your desired crunchiness, ensure that you stir so the mixture doesn't burn. If you want the vegetable crunchy don't cook it too long; season with paprika, salt, and pepper.

Crack the eggs in a bowl, add milk, and season with salt and pepper.

Spread mayo/butter on each side of the bread and set aside.

Use a spatula to spread the mixture out and pour the egg mixture into heat.

Use a spatula to lift the cooked egg from the side, allowing the uncooked egg mixture to move around.

Use the tip of the spatula to divide the egg into two. It is okay to notice the uncooked egg mixture flowing.

Top with cheese depending on how cheesy you want it. If you're using cheese slices, 1-2 slices will be enough for each sandwich.

Fold each egg and top with a slice of bread, use the tip of the spatula to push the flowing egg towards the cooked egg, then flip, making the egg face up; this will allow the bread to toast in the pan.

Top the egg (facing up) with more cheese if desired, and top with the second slice of bread and spread mayo/butter. Flip to toast until golden, or to your desired.

Turn off the heat, remove the sandwiches from the pan, and serve as desired. The sandwich is very filling and delicious. Enjoy!
