Spicy Grilled Chicken

Ingredients

  • 10 pieces drumsticks (clean and fat tried)
  • 2 Tablespoons olive oil (or your choice)
  • ¼ cup red pepper flakes (adjust to your preference)
  • 1 Tablespoon Cayenne pepper paprika, garlic powder, onion powder (each)
  • 2 Teaspoons dried thyme
  • 1 teaspoon curry powder
  • Seasoning powder/cube (optional)
  • Salt to taste

Instructions

  1. Clean the chicken pat dry, season with salt and drizzle oil over it, mix to coat all the chicken.

  2. In a bowl, combine the rest of the ingredients don’t forget to adjust the spice to your preference.

  3. Mix and pour over the chicken. Massage the chicken and make sure the chicken is well coated.

  4. Marinate for at least 30 minutes up to overnight, I did overnight in the refrigerator.

  5. Remove the chicken from the refrigerator and allow it to return to room temperature.
  6. Preheat the oven to 400 degrees F or grill.
  7. If you’re using an oven, place a wire rack over a baking sheet or use a cast iron skillet grill and cook on both sides to have the grill marks then cook in the oven for 20 minutes, flip, and cook for another 10 minutes.

  8. If you’re using a grill coat the grill oil and place the chicken on it, cook for 30-35 minutes (depending size) flipping every 7-10 minutes until the chicken is fully cooked or the internal temperature reaches 165 degrees F.

  9. Allow to cool down, serve with your side and enjoy it

  10. Spicy grilled chicken paired with coconut rice and coleslaw.
