Season the shrimp with salt and pepper and mix. I like my seasonings to get into the shrimps and not just on the panko and the flour.
In a bowl, mix the flour, salt, Italian seasoning, paprika, onion, and garlic powders.
In another bowl, mix the eggs, with a sprinkle of salt, milk, and whisk.
Arrange your dredge station; flour mixture first, next egg mixture, and panko sprinkle with salt.
Coat the shrimps with the flour mixture then shake off the excess flour. You can do it all at once as shown in the picture
Dip the shrimps into the egg mixture, a few at a time.
Coat in the breadcrumbs and drop on a baking sheet or a tray.
TIP: I poured the flour into a ziplock bag to coat the shrimps' then pour on a tray shook off the flour excess before dipping it into the egg, then pour the breadcrumbs into a ziplock to coat just like I did with the flour.
Heat oil in a frying pan or a fryer to 350 degrees F, when the oil is hot drop the coated shrimps, don't overcrowd the oil, flip and fry the other side. fry until both sides are golden brown and crispy.
Drain the fried popcorn shrimps on a lined plate.
Serve the popcorn shrimps with your favorite condiment. Enjoy!
If you're using different sizes (as I did) of the shrimps make sure you fry the ones with the same size at the same time because of the cooking or frying time.
