Applesauce Pancake

Ingredients

  • 1.5 Cups All-purpose flour
  • 1 Cup Buttermilk
  • 1 Cup Applesauce
  • 1 Egg
  • 1 Teaspoon Baking powder
  • 1/8 Cup Brown sugar (adjust to your preference )
  • 1/2 Teaspoon Ground cinnamon
  • 2 Tablespoon Butter or oilve oil
  • 1/2 Teaspoon Vanilla extract
  • 1/2 Teaspoon Salt

Instructions

  1. In a bowl, add flour, salt, brown sugar, baking powder, ground cinnamon. Mix and set aside.

  2. In another small bowl, separate the egg white from the yolk. Whip the egg white to a stiff peak with a hand mixer and set aside.

  3. Melt butter or if you're using oil, mix with the egg yolk, vanilla extract,  and buttermilk. 

  4. Add the buttermilk mixture to the flour and combine.

  5. Add the applesauce and mix.

  6. Gently fold in the egg white into the mixture. Don't overmix!

  7. Heat the griddle/pan over medium-high heat and grease with oil/butter. Gently pour small amount/dollop of batter on the griddle.

  8. When the top is bubbling flip to cook the other side for about 1 minute or thereabouts until the pancake is cooked through. Repeat until you exhaust the batter.

  9. Serve and Enjoy!
