Pineapple Fried Rice

Pineapple Chicken Fried Rice

Ingredients

  • 2.5 Cups Cooked rice (any type of rice of your choice)
  • ½ Pound Boneless chicken thigh (cut into bite size)
  • 2 Eggs (scrambled)
  • 1 Cup Pineapple (diced)
  • 12 Oz Mixed vegetables (green beans, carrot, corn and peas)
  • ½ Cup Red bell pepper
  • 1 Small Onion (chopped)
  • 1 Clove Garlic (minced)
  • 2 Tablespoons Soy sauce
  • 2 Tablespoons Vegetable oil (or your choice)
  • 1 Tablespoon Toasted sesame oil (optional)
  • Knorr bouillon powder/cube
  • Salt and pepper

Instructions

  1. Cook the rice according to the package instructions or used leftover rice. Chop all the vegetables, fruits and set aside.

  2. Season the chicken with knorr, any seasoning of your choice, salt, and pepper.

  3. Place a skillet/saucepan over medium-high heat. Add the oil and sear/brown the chicken until cooked through. Remove and set aside.

  4. In the same pan add the chopped onion, garlic and sauté.

  5. Add the mixed vegetables, season and combine.

  6. Add the red bell pepper and stir. Cook until the vegetables are soft about 3 minutes. Remove and set aside.

  7. Break the eggs, season with salt and pepper, beaten.

  8. In the same pan, scramble the eggs.

  9. Add the pineapple and vegetables, and combine. Cook for about 2 minutes make sure you stir to avoid burning.

  10. Add chicken and combine.

  11. Add the cooked rice and soy sauce and the sesame oil (if you’re using). Then gently combine.

  12. Let the content heat up, check the season and adjust if necessary.
