Soak the potatoes in a bowl of cold water for as long as you can but for a minimum of 30 minutes to remove starch, it also helps with the crispiness of the fries.
Pat dry the potatoes, you can use paper towels to get as much moisture out of the potatoes as possible. Another step is to blanch the sliced raw potatoes with apple cider vinegar for a few minutes, drain then fry.
Heat oil in a fryer or a skillet over medium-high heat, fry for a few minutes, drain, allow the oil to get hot and refry again. This helps the inside to get soft and the outside crispy.
Drain on lined paper towels and sprinkle salt over the fries immediately, I like some black pepper on mine.
