In a medium size bowl, add all the ingredients except water.
Whisk the ingredients together until smooth, and slowly add water about 1/8 cup at first.
You need the sauce to be thick but still pourable, so if it’s too thick slowly add water about a tablespoon at a time until you get the consistency you want.
You can enjoy this sauce with noodles, salad, pour over an ice cream and so on. If you need more acidity, add more lime juice, if you want more sweetness, add more maple syrup, for more heat, add more red pepper flake.
You can make it ahead, refrigerate in a covered jar and bring to a room temperature when you’re ready to use.
