Prepare all the ingredients; slice, dice and set as aside.
Heat a tablespoon of oil in a non-stick pan over medium-high heat.
Sauté diced onion and minced garlic for a few minutes, then add the red bell, green onions. Season with salt and pepper, combine and remove from the skillet when the vegetables are soft and set aside.
Slice the sausages into small rings and add to the same pan. Cook for about 2-4 minutes (until lightly brown) depending on the size of the sausages. Drain the excess oil if the sausage you used has excess oil and discard reserving about a tablespoon for eggs.
Whisk the eggs, milk, season with salt and pepper
Pour into the same skillet with sausage and fold in, cook until no liquid the is seen, about 3-5 minutes.
Set aside.
Set the table to assemble the burrito, you can add cheese if you wish.
Warm the tortillas and serve the egg and sausage mixture in the middle, cheese, tomatoes, and red bell mixture then top with the sliced avocados.
Pull in the opposite side of the tortilla, then roll up just before you roll up to the end smear a pinch of mayonnaise (this helps with the sealing) then roll up. Don't overfill the tortilla.
If you don’t want to warm your tortilla as mentioned above, place a cast iron over medium-high heat, drizzle about a teaspoon of oil (to avoid sticking) and place the seam side onto the skillet and allow to warm up and seal the burrito. You can also bake in the 350 degrees F preheated oven for about 5-10 minutes.
Slice up and serve.
