I used the same dough recipe I used in a homemade pizza recipe I posted a while ago with an exception.
While I was making the dough I added rosemary and that's it.
While the dough is resting, place a saucepan over medium heat, and heat half of the oil, add seasonings, garlic, and red pepper flakes and infuse the oil with the seasonings. Remove from the heat after 1-2 minutes and set aside.
Preheat the oven to 400 degrees F, and also line a baking pan with foil and set aside
Peel, remove the seeds, clean and dice up the vegetables.
I used Acorn squash and butternut squash
Season with salt and pepper. Drizzle about 1/2 Teaspoon of oil and toss. Pour onto the prepared baking sheet and roast in the preheated oven for about 10 minutes until the vegetables are tender.
Preheat the oven to 500 degrees F. Sprinkle cornmeal on the pizza pan/pizza stone and set aside.
Punch down the dough as you would when making pizza and place on a floured worktop and stretch (to the side of your pizza pan) out the dough with your hands or a rolling pin.
Place the dough on the prepared pizza pan, brush with the oil (made earlier) and top with the roasted squash and shredded cheese.
Bake for 15-17 minutes until the crust edge is golden brown.
Serve warm and enjoy!
