Easy Chicken Salad

Ingredients

  • 12.5 oz. Chicken breast chunk in water; 2 cans (drained well)
  • 1 Cup Greek Yogurt (or Mayo)
  • 2 Tablespoons Lemon Juice
  • 1 Celery (minced)
  • 1 Ripe Avocado (pitted, peeled, and diced)
  • ΒΌ Cup Cucumber (diced)
  • 2 Pieces Dill Pickles (optional; diced)
  • Splash of Pickle juice
  • 1 Green Onion (thinly sliced)
  • 1 Teaspoon Italian seasoning
  • 2 Tablespoons Olive oil
  • Salt and pepper

Instructions

  1. In a shallow bowl, add drained chicken breast make sure it is well drained.

  2. Flake then add the Greek yogurt and combine.

  3. Dice/mince the green onion, cucumber, pickles, celery, avocado, and add to the chicken mixture.

    Add lemon juice, season with salt and pepper and combine.

  4. I like my chicken salad spread and creamy but if you like it a little bit chunky and not too creamy reduce the yogurt/mayo quantity then work your way up or up more vegetables.

  5. Chicken salad goes with lettuce, toasted bread, you can scoop out the cucumber and fill it with the chicken salad and so on. I still love some heat so I sprinkled red pepper flake for some heat.
