Grate the zucchini, chop the onion and set aside.
Heat oil in a non-skillet pan or pot, add onion and saute until softens, add the Italian seasoning, garlic, tomato paste, stir and continue cooking until you can't taste the sourness from the tomato paste.
Add the ground chicken and allow to cook for a few minutes before breaking it apart. Use a spoon or ladle to break the chicken, season with salt and pepper and continue to cook.
Allow the chicken to cook thoroughly then add the grated zucchini then combine. Cook until the vegetable warm up about 1 minute. Check the seasoning and adjust accordingly.
Serve over rice, pasta or your favorite side.
