Mexican Rice

Prep Time 10 minutes
Cook Time 20 minutes

Ingredients

  • 2 Cups Long grain rice (rinse and drained)
  • 1 Cup Shredded cheese
  • 1 Cup Peas and carrot
  • 2 Tablespoons Butter or Extra olive oil
  • 2 Cloves Garlic (minced)
  • Broth or water for cooking
  • 1 Onion (diced)
  • 1 Teaspoon Chili (adjust to your preference)
  • 1 Teaspoon Cumin
  • 1 Tomato
  • 1 Green onion for garnish
  • Lime wedge for garnish
  • 2 Tablespoons Cilantro (chopped)
  • Salt and pepper to taste

Instructions

  1. Rinse the rice, and set aside. Place a skillet over a medium and melt the butter or heat the oil if that's what you're using. Add chopped onion and saute for a few minutes. Add minced garlic and stir.

  2. Add the peas, carrot, cumin, and chili. Stir and combine everything.

  3. Add the rice and combine. Add the broth just enough to cover it, season with salt and pepper cover and bring to a boil then allow to simmer.

  4. Chop the cilantro, tomato, green onion and set aside.

  5. After the rice is done, sprinkle the cheese, tomato, cilantro, and green onion then allow to steam for a few minutes.

  6. Serve, feel free to add lime juice to it.
