Shrimp Fra Diavolo

Ingredients

  • 1 Pound Shrimp (deveined, tail on/off, cleaned)
  • 1 Can whole peeled /diced tomatoes); 28oz
  • ¼-1/2 Cup cooking white wine
  • ¼ Cup Extra olive oil (or your choice)
  • 3 Cloves garlic (minced)
  • 1 Teaspoon Paprika
  • 2-3 Teaspoons Red pepper flakes (adjust to your preference)
  • ½ Teaspoon Oregano
  • 1/8 Fresh herbs (parsley, basil or a combination of both)
  • Salt and pepper to taste

Instructions

  1. In a bowl, add the cleaned shrimp, a teaspoon of a few drops of oil, red pepper flakes, salt, and pepper then combine.

  2. Heat a skillet/pan over high heat, add the seasoned shrimp in a single layer and cook for about 1-2 minutes. Remove onto a plate and set aside.

  3. Reduce the heat and then add the remaining oil, add garlic, oregano, the remaining pepper flakes and cook for about 1-2 minutes, you really want to do this on low heat because of the pepper. When you notice the garlic is about to get brown add the cooking wine to deglaze the pan and all the little bit that might have got stuck to the skillet/pan.

  4. Add tomatoes, salt, and pepper then increase the stove heat to medium-high, cook until the mixture simmer and thickens this takes about 8 minutes. You’ll notice the oil floats.

  5. Transfer the shrimp to the pan, add the herbs.

  6. check the seasoning and readjust if necessary.
