Crispy Smashed Potatoes

Ingredients

  • 1.5 Pounds small potatoes (red or yellow or golden)
  • 4 Tablespoons Olive oil (or your choice)
  • 1 Teaspoon Dried rosemary
  • 1/2 Teaspoon Garlic and onion Powders (each)
  • 1 Tablespoon Dried parsley (or fresh)
  • Salt and pepper to taste

Instructions

  1. Soak the potatoes in for a few minutes, scrub very well and rinse under running water. Place the clean potato in a colander and removed sprout areas if there is any.

  2. Place the potatoes in a large pot filled with water make sure the potatoes are submerged. Season with salt, cover, and ring to a boil over medium-high heat. Cook until you can easily pierce the with a fork, it takes about 20 minutes it might take about 5 minutes longer if you're using medium size potatoes.

  3. While the potatoes are cooking preheat the oven to 400 degrees F. Grease a baking sheet with oil and set aside. When the potatoes are done, drain, and allow them to cool down in a colander.

  4. Transfer the cooked potatoes to the greased baking sheet. Use a fork, or a potato masher to gently smash the potatoes, the thinner the crispier.

  5. Mix the parsley, rosemary, garlic powder, onion powder, salt, and pepper in a small bowl.

  6. Drill oil over the potatoes and season with the garlic mixture making sure the potatoes are spread out on the baking sheet.
