Shrimps Scampi with Pasta

Ingredients

  • 1 Pack Pasta (I used 17.6 oz)
  • 1 Small Onion (chopped)
  • 4 Tablespoons Butter
  • 1 Clove Garlic
  • 1/2 Cup White wine (or broth)
  • 1/2 Lemon Juiced
  • 1 Can Diced Tomato, 14.5 oz (you can use cherry or fresh tomatoes)
  • 1 Pound Shrimps (peeled, deveined and tail on)
  • 1/2 Teaspoon Curry powder
  • 1/2 Teaspoon Thyme
  • 1/2 Teaspoon Black pepper
  • 1/2 Teaspoon Onion powder
  • Seasoning cube
  • Pinch of Cayenne or Dry pepper
  • 1/2 Teaspoon Garlic powder

Instructions

  1. Cook pasta in a boiling water with salt, undercook by 2 minutes the cooking time on the package.  

    TIP: Drizzle oil or butter over pasta so it doesn't stick together.

  2. Season the shrimps with salt, black pepper, seasoning cube, onion and garlic powders, thyme and curry powder and mix. Set aside.

  3. Mix and set aside.

  4. Place a saucepan or pot over medium-high heat and add butter. Add seasoned shrimps (in one layer, don't overlap them), cook on both sides about 3-4 minutes until the color changes. Transfer to a plate and set aside.

  5. In the same pan, add onion and garlic, saute for about 1 minute. Add white wine or broth whichever one you're using, also add tomato.

  6. Add the cooked shrimps, mix.

  7. Add the cooked pasta (reserve some water from the pasta, you might need it).

    Toss everything together and check for seasoning, readjust the seasoning if it needs more.

There are varieties of pasta, use any type you like; Fettuccine, Linguine etcetera.
