Sweet and Spicy Mango Shrimps

Ingredients

  • 12 Oz Large Shrimps (About 26-30 pieces); peeled, deveined, tail-on
  • 1 Mango (ripe and firm)
  • 3 Tablespoons Olive oil (or your choice); divided
  • 1/2 Onion (chopped)
  • 1 Teaspoon Minced ginger
  • 1 Clove garlic (minced)
  • 1 Teaspoon Red pepper flake
  • 1/4 Cup Green bell (diced)
  • 2 Teaspoons Lemon juice
  • 1 Teaspoon Onion powder
  • 1/2 Teaspoon Turmeric
  • Knorr bouillon powder/cube
  • Salt to taste

Instructions

  1. Place the shrimps (peeled, deveined, tail-on) in a shallow bowl, season with knorr, onion powder, and salt.

  2. Mix to combine and set aside for about 30 minutes.

  3. Chop the green bell and onion. Dice up the mango and set aside.

  4. Place a saucepan/pot over medium heat and heat the oil.

  5. Saute the onion, garlic, and ginger for a few minutes.

  6. Add the green bell and stir, cook for a few minutes, season with salt. Remove and set aside

  7. In the same pan, cook the shrimps. Cook on each side for a couple of minutes until it's pink and opaque. You can do the cooking in batches if you're using a small saucepan/skillet.

  8. Transfer the onion mixture, add the red pepper flake and combine.

  9. Add the mango, turmeric, and drizzle the lemon juice and let it simmer until the mango releases it juice. Check the season and readjust accordingly.
