Clean the gizzard and boil (with knorr, salt, and any seasoning of your choice) until soft. You can make the stew with the boiled gizzards like that or bake/fry, I baked them. Set aside.
Rinse the peppers and deseed, clean the onion.
Place saucepan/pot over medium-high heat and add the blended peppers mixture. Boil until the liquid dries up.
Add the seasoning (I used thyme), knorr, and salt. Mix to combine.
Add gizzards and mix thoroughly.
Add the oil and stir.
Cook for a few minutes and check the seasonings. Voila, the gizzard stew is ready.
Serve and enjoy or serve with your favorite side dish.
