Run water over the fish and pat dry. Line a baking sheet with foil and grease with oil.
Preheat the oven to 400 degrees F.
Slit the fish using a knife on the side where the gut is, and remove the gut.
Dry again and make sure the fish is dry. Generously season with salt both inside and outside
Gently bend (like folding) the fish one at a time and put the tail in the fish's mouth as shown in the picture and use a toothpick to secure both the mouth and the tail.
Place the fish on a lightly greased baking pan and repeat the process until you're done. Drizzle the oil over the fish to avoid drying out and sticking.
Bake in the oven for 1 hour to 1.5 hours depending on how you want your fish.
You can use open fire, like charcoal fire/ barbecue grill.
You can use the fish for stew.
You can use it for vegetable stew/efo riro. You can eat by itself, with garri and the list is endless.
